I believe great shops create an environment where you discover something you didn’t know you were missing. In this age of “I want what I want when I want it’ sometimes the best place to find yourself is handed over to the people who can anticipate your first move before you do. I don’t subscribe to the customer is always right philosophy because great hospitality isn’t about giving the customer exactly what she wants.
